Ohiwa Black Diamonds: Truffle Pasta
Have you acquired fresh truffle recently and aren't sure where to start? Or maybe you're looking for a new delicious dish to impress your dinner guests with?
This recipe will satisfy 4 people (be warned though... some may want seconds!)
Ingredients
- 500 g linguine pasta
- 100 g Parmesan cheese
- 150 g butter
- 60 g fresh black truffle
- salt & pepper to taste
Method:
Begin cooking the pasta in a large pot of salted boiling water until al dente. While this is happening, grate the cheese and melt butter in a large sauté pan.
Set aside some of the pasta water before straining.
Add the cooked pasta to the sauté pan and toss to combine with the melted butter.
Add in the grated cheese and some pasta water to loosen mixture to the desired consistency. Mix until well combined. Season with salt and pepper.
Thinly shave black truffle over each bowl of pasta
